Classic Roast Chicken


- slather the bird with olive oil inside and out.
- sprinkle on kosher salt, pepper inside and out and under the skin.
- put a half lemon and some garlic cloves in the cavity.

- tie the legs together
- on the top of the chicken place: 3 heads garlic, 1 sliced onion (in quarters) and 1 sliced lemon

- put 1 cup low sodium chicken broth in the pan
- Cook at 375 for 1 hour
- cover with foil
- baste and then cook 30 -40 min at 450.

for a sauce, thicken the chicken juices and simmer till thickened.
