Spaghetti Salad

1 16 oz bottle of italian salad dressing (I like 7 seas)
1 bottle of salad supreme seasoning

add any combo of:

red onion
green bell pepper

Add everything togather and marinade overnight. Keeps well for several days.

Roast Beef and Red Pepper sandwich

roast beef
bottled sweet red peppers
monteray jack cheese
water cress? spinach

Taco Soup

1/2 # lean hamburger precooked (gravel)
1 c or so of chopped onions (browned tastes better) but raw are fine also
1 - 16 oz can whole tomatoes (break up) or diced
1 - 16 oz can pinto beans
1 - 16 oz can corn (drained)
1 - 8 oz can tomato sauce
1 - 4 oz can mushrooms (opt)
1 pkg taco seasoning

simmer together 15- 20 minutes

Add some fresh cilantro at the end and serve.
opt - add a dab of sour cream to each bowl as well as some shredded cheese.

Sauteed asparagus with aged Gouda

1 T plus 1 1/2 ts unsalted butter
1 lb thin asparagus, trimmed
course salt and freshly ground pepper
2 oz Gouda cheese, shaved

melt the butter in a lg skillet over medium-high heat. Add asparagus spears, and saute until they are tender and bright green, 2-3 min. Season with salt and pepper. Transfer to a large platter, and top with Gouda. Serve immediatly.

Baked Beans

1 53 oz can Van de Camps baked beans
8 slices cooked bacon
1 1/2 C chopped onion
1/2 C ketchup
1/4 C brown sugar
2 T yellow mustard

simmer together till flavors blend

Twice Baked Potato Casserole

...from Bell Buckle Tenn.

mashed potatoes with sour cream, cream cheese, garlic salt, butter and minced onion

next day - bake in a buttered pan with cheese and bacon on top

Cover with foil and bake

Mashed Potato Casserole

Mashed potatoes
cream cheese, sour cream. milk, butter, salt and pepper
(as much as you want of each)
bake at 350 till warm throughout

Buttery Pureed Cauliflower

prep 10 min, cook 20 min

2 small heads cauliflower
3 T unsalted butter
3 T flour
3/4 C heavy cream
1 3/4 ts salt
pinch of ground nutmeg
pinch of cayenne pepper
1 large egg
2 T chopped fresh parsley
3 T grated parmesan

1. Heat over to 350. Coat a 2 qt souffle dish with non stick cooking spray
2. Bring large pot of lightly salted water to a boil. Add cauliflower (or cook in a steamer)
Cook until tender abt 15 min. Drain well

3. Melt butter in small saucepan over medium heat. Sprinkle flour over top; whisk until combined, cook over medium heat, whisking occasionally, 3 min. Whisk in heavy cream, 3/4 ts salt, nutmeg and cayenne. Remove saucepan from heat.

4. Transfer caulif and cream mixture to food processor. Puree, in batches if necessary, until smooth. Season with remaining ts salt. Stir in parsley and 2 T parmesan.

5. Transfer caulif mixture to prepared baking dish. Sprinkle top with remaining T cheese.

6. Bake in 350 oven about 30 min. Let stand 10 min before serving

If this is too thin, add some potatoe pearls instant potatoes.

Roasted Asparagus - mom's favorite way

400 - 10 min

roast on cookie sheet with orange juice vinagrette

Chicken Puffs (hamsters)

2 cans Pilsbury crescent rolls

8 oz cream cheese
1/4 c margarine
1 T dried chives
1/8 ts pepper

Add 2 C cubed cooked chicken

Put a heaping T of mixture in middle of a crescent and roll up
Roll in melted butter, then in Pepperidge Farm stuffing mix.

Place on cookies sheet and let rise 30 min.
Bake 375 - 20 min till brown

Gravy is a can of cr of chicken soup, diluted with 1/2 - 3/4 c milk


4 granny smith apples
1/4 c. water
2 ts lemon jc
1 T sugar
1/2 ts cinnemon
dash cloves
dash salt

boil/simmer till water is absorbed

Dutch Red Cabbage

Grandma " When Bep was born my mother was so nervous dat she burned the red cabbage dat she was fixing for dinner."

1 head red cabbage sliced thin
1 granny smith apple - peeled and siced
1 onion - chopped
2 bay leaves
1/2 cup water

1/2 ts cinnemon
1/2 ts nutmeg
1/4 ts cloves
2 T vinegar
2 T sugar

Bring the first 5 ingredients to a boil - simmer 20 - 30 minutes. Don't let this dry out.
Thicken with corn starch - 1 T in a little water
Boil one min.
Add spices
Then add vineagar and sugar
Salt and perpper to taste

Bacon Brown Sugar Brussels Sprouts

10 min prep
4 bacon slices
1 (14 oz) can chicken broth
1 T brown sugar
1 ts Kosher salt
1 1/2 Brussels sprouts, trimmed and halved

1. Cook bacon in a Dutch oven over medium heat 10 min or until crisp. Remove bacon, and drain on paper towels, reserving drippings in Dutch oven. Crumble bacon.

2. Add broth, brown sugar, and salt to drippings, in Dutch oven, and bring to boil. Stir in Brussels sprouts. Cover and cook 6 - 8 min, or till tender. Transfer sprouts to a serving bowl using a slotted spoon, and sprinkle with bacon. Serve immediately.
