Grandma Boot's Potato Salad


The uniqueness of this salad is the methos of preparation, not the ingredients.

15 red potatoes
12 hard boiled eggs
3/4 C sweet pickle relish
2 C mayonnaise
1 1/2 T mustard
2 ts celery salt
1 1/2 ts seasoning salt
4 chopped green onions
1 T pickle juice

Boil and cool potatoes completely.
Separate the cooked egg yolks from the whites.
Beat together the egg yolks, relish, mayo (real), salts, onions, and pickle juice (or vinegar).
Chop the whites and fold into the yolk mixture. Peel and dice potatoes and fold into salad mixture.
Cover and chill overnight to blend flavors.

Chicken Tortellini Salad

from Aunt Elyn - this is really good!

1 - 9 oz pkg cheese tortellini. Cook as directed on package. Chill

1 bottle marinated artichoke hearts
1 can whole black olives (opt)
2 chicken breasts diced in chunks and marinated in 2 T Paul Newman caesar dressing. Stir fry
2 cups spinach leaves
1/3 cup Newman Caesar dressing

Combine all ingredients except spinach, add spinach right before serving.

Cold green bean salad


Steam fresh green beans half way, then plunge in ice water

add:
feta cheese
Ooil
rice vinegar
salt & pepper

Grilled Chicken Salad with feta & red pepper sauce


Pre grill Chicken Breasts and cut into thick slices and freezer or use immediately.

asparagus - steam in fry pan 1-2 minutes, (fry a little in a bit of oil or butter) drain . Salt and pepper.


Dressing:
bottled roasted red peppers
feta cheese
2 T ol oil
1 T lemon jc
1/2 ts oregano

Put chicken over greens and top with the asparagus and then the dressing.
Dad likes a little balsamic over this as well

Spaghetti Salad


1 16 oz bottle of italian salad dressing (I like 7 seas)
1 bottle of salad supreme seasoning

add any combo of:

tomatoes
cucumber
red onion
green bell pepper

Add everything togather and marinade overnight. Keeps well for several days.
